How your knife is made

Steel selection
Truck leaf springs are sourced locally in Nepal and cut to size. 5160 spring steel is tough, holds an edge, and sharpens easily on a whetstone or river stone — the same steel we use for our Gurkha kukris.
Forge & shape
The steel is heated in a coal forge and hand-hammered to shape on the anvil. No die-stamping, no CNC. Each blade carries the small variations of hand work — visible hammer marks, asymmetric grind lines, unique character.
Temper & grind
Oil-tempered for hardness and edge retention, then hand-ground on a belt sander to the final blade geometry. Edge is finished on a leather strop until it shaves cleanly.
Handle & finish
Full-tang handle is fitted in rosewood, buffalo horn, or stacked leather. Personalisation is engraved at this stage — your name, a date, initials, or a short message — included free with every order.

Chef knives — Western, Japanese-influenced, and specialty
Our hand-forged chef knife range covers the everyday all-rounders and the specialty profiles. Western chef knives at 9, 10, 12, and 13-inch blade lengths give you a robust workhorse for slicing, dicing, and mincing. Japanese-influenced profiles include a santoku for vegetable work, a gyuto for all-purpose cutting, a kiritsuke for slicing, a sujihiki for carving, and a tanto-style chef knife that bridges kitchen and outdoor use. Cleavers — butcher, kitchen, Serbian, and Chinese styles
The cleaver range is our most-requested category. The Butcher's Heavy Cleaver and our 10-inch and 12-inch Kitchen Cleavers are forward-weighted choppers for serious meat work. The Serbian-style cleavers at 9 and 10 inches bring the rectangular Balkan profile prized by butchers and home cooks alike. Our Chinese chef cleaver handles vegetable prep with the broad-blade rocking technique. Boning & fillet knives

What steel are your kitchen knives made from?
All our chef and kitchen knives are forged from 5160 high-carbon spring steel — recycled from truck leaf springs sourced locally in Nepal. It's the same steel we use for our Gurkha kukris. 5160 is tough, holds a working edge well, and sharpens easily on a whetstone. It's a high-carbon steel, so it will develop a patina over time and needs to be hand-washed and dried after use (no dishwasher). How does your steel compare to Japanese carbon steels like white or blue paper steel?
Honestly: 5160 is a different steel for a different buyer. Japanese carbon steels (Shirogami / Aogami / VG10) get harder (62–65 HRC) and hold a finer edge longer, but they chip more easily and need more careful sharpening. Our 5160 sits around 58 HRC — slightly softer, much tougher, easier to maintain, and forgiving of rough use. If you want a precision sushi knife, buy a Japanese-made gyuto. If you want a hand-forged kitchen knife with character that handles real cooking — including the occasional bone or frozen vegetable — 5160 is the right choice. Is personalisation really free? What can I have engraved?
Yes — free on every product, no exceptions. You can engrave a name, initials, a date, a short message, or a recipient's first name. Engraving is done by hand on the blade or handle (your choice). Add your text in the personalisation field at checkout. We'll email you a confirmation before forging if the text is unusual.
What's the difference between buying from the collection and using the custom forge service?
The collection covers 30+ standard designs at fixed prices ($105–$145). Each can be customised in handle material, blade length, finish, and scabbard, plus free personalisation. The custom forge service is for fully bespoke builds — sketch your own profile, request a non-standard blade length, specify exotic handle materials, or commission a one-of-a-kind chef's knife. Custom builds are quoted individually and typically take 2–4 weeks.
How long until my knife arrives?
3–5 business days for forging in Kathmandu, then 5–10 days for international shipping by DHL Express or FedEx International — so 8–15 days total from order to delivery in most countries. Custom-forge orders take longer (typically 2–4 weeks). Shipping is free worldwide.
How do I care for a 5160 carbon steel kitchen knife?
Hand-wash only with warm water and mild soap. Dry immediately with a towel. Apply a thin coat of food-safe mineral oil or camellia oil before storing — especially in humid kitchens. Never put the knife in a dishwasher. Sharpen on a whetstone or with a honing rod as needed. The blade will develop a grey-blue patina with use; this is normal and protects the steel. If rust spots appear, rub gently with a cork dipped in baking soda and re-oil.
Can I use these for outdoor cooking, BBQ, or camp use?
Absolutely — and many of our customers do. Our kitchen hatchets, cleavers, and the Pizza Axe in particular are popular with BBQ enthusiasts and outdoor cooks. The 5160 steel handles the rougher use (cutting on a wood block, occasional bone work, weather exposure) better than Japanese-style kitchen steels would. Just dry and oil the blade after use — same care as any carbon steel.
Do you offer returns or warranty?
