The Everest Forge Serbian Kitchen Cleaver is a 9-inch hand-forged butcher knife built for serious meat work, bone chopping, and heavy vegetable prep. Forged in our Kathmandu workshop from 5160 high-carbon leaf spring steel, water-quenched, and finished with a full tang rosewood handle, this cleaver delivers the rugged forged aesthetic and cutting performance that home cooks, chefs, and butchers want from a true working blade. How We Forge Your Cleaver

1. Steel Selection

We start with 5160 high-carbon leaf spring steel — sourced and graded for the right balance of toughness and edge-holding for heavy chopping work.

2. Hand Forging

The blade is heated, hammered, and shaped at the anvil by master blacksmiths. The forged-finish surface preserves the visible texture of the forging process.

3. Tempering & Quench

Water-quenched and tempered using traditional Nepali methods to lock in hardness without making the blade brittle. This gives the cleaver its working edge.

4. Handle, Sharpen, Scabbard

A full tang rosewood handle is fitted, the blade is sharpened ready to use, and a handcrafted wooden scabbard is built to match. Every piece is inspected before it ships.

Yes — 5160 is exceptional for working kitchen blades. It's a high-carbon spring steel originally engineered for vehicle suspensions, which means it's tough, holds an edge well, and resists chipping during heavy chopping. After water-quenching and tempering, the blade gains the right balance of hardness and flexibility for splitting bones and chopping through dense materials without cracking. It will develop a natural patina over time with use, which is normal for high-carbon steel and adds character.

How sharp is the blade when it arrives?

It arrives sharpened and ready to use straight out of the scabbard. Each cleaver is hand-sharpened by our blacksmiths before shipping. Like any working high-carbon blade, the edge will dull with use and benefit from periodic honing — a standard kitchen sharpening rod or whetstone is all you need.

How do I care for the high-carbon blade and rosewood handle?

After each use, wipe the blade dry — never put it in a dishwasher. A light wipe of food-safe mineral oil or vegetable oil on the blade will prevent rust and protect the forged finish. Rosewood handles benefit from an occasional rub of mineral oil or beeswax to keep the wood conditioned. Store in the wooden scabbard when not in use.
