Hand-Forged Chef Knife — 5160 Carbon Steel, Full Tang, Made in Kathmandu
This is a working chef knife, not a display piece. The 12-inch blade is hand-forged from 5160 high-carbon spring steel — the same steel we use for our Gurkha kukris — heated in a coal forge, shaped on the anvil, oil-tempered, and hand-ground to a working edge. The result is a kitchen knife with real weight (660g blade-only), real balance, and the kind of character that only comes from hand work. Every blade carries slight variations in the grind and finish that make each knife unique.
The full-tang rosewood handle runs the full 6 inches and is pinned through the steel for permanent strength. Total length is 18 inches. Available in three blade lengths (10, 12, and 14 inches), multiple handle materials, three blade finishes, and a range of leather and wooden scabbard options — all selectable above the Add to Cart button. Free personalisation (name, initials, date, or short message engraved on blade or handle) is included with every order at no extra cost.

How this knife is forged
Steel & cutting
5160 leaf spring steel sourced from recycled truck springs in Nepal. Cut to billet, inspected for grain consistency, then marked to the blade profile.
Forge & shape
Heated to forging temperature in a coal forge and hand-hammered to shape on the anvil. The chef knife profile — flat spine, curved belly, tapered tip — is drawn out by hand, not stamped.
Temper & grind
Oil-quenched and tempered to ~58 HRC. Hand-ground on a belt sander to the final blade geometry, then hand-stropped to a working edge.
Handle & personalisation
Full-tang handle fitted and pinned in your chosen material. Personalisation engraved by hand at this stage — free with every order.

Why a hand-forged chef knife over a factory blade?
Factory chef knives are stamped from sheet steel — the grain runs across the blade. Hand-forged blades are shaped from solid bar stock, which aligns the grain along the length of the knife. The result is a tougher, more flexible blade that handles real kitchen work — including the occasional bone, frozen vegetable, or heavy chopping session — without chipping. For a full comparison read our guide on why hand-forged chef knives outperform factory-made blades.

Care instructions
5160 is a high-carbon steel — it performs better than stainless in edge retention but needs basic care. Hand-wash with warm water and mild soap after each use. Dry immediately with a towel. Apply a thin coat of food-safe mineral oil before storing. Never put this knife in a dishwasher. Sharpen on a whetstone or honing rod as needed. The blade will develop a grey-blue patina with use — this is normal and protects the steel. Store flat or on a magnetic rack, not loose in a drawer.

Frequently asked questions
What steel is this chef knife made from?
5160 high-carbon spring steel — recycled from truck leaf springs sourced locally in Nepal. The same steel we use for our Gurkha kukris. Oil-tempered to ~58 HRC. It holds a working edge well, sharpens easily on a whetstone, and develops a grey-blue patina with use that protects the steel. Hand-wash and dry after each use — no dishwasher.
What blade length should I choose — 10, 12, or 14 inches?
12 inches is the standard chef knife length — the right size for most kitchen tasks including slicing, dicing, and mincing. Choose 10 inches if you prefer a shorter, more manoeuvrable knife for precise work or smaller hands. Choose 14 inches if you do a lot of large-batch prep, butchering, or work with big cuts of meat. All three are the same blade profile and steel — just different lengths.
Can I get this knife personalised?
Yes — free on every order. Add a name, initials, a date, or a short message in the personalisation field above the Add to Cart button. Engraving is done by hand on the blade or handle (your choice). For custom logo or photo engraving, use the file upload field at checkout.
How is this different from a Japanese chef knife?
Japanese chef knives typically use harder steels (62–65 HRC) with thinner grinds — excellent edge retention but more brittle and harder to sharpen. This knife uses 5160 at ~58 HRC — slightly softer, much tougher, easier to maintain, and more forgiving of rough use. If you want a precision knife for paper-thin sashimi slices, buy a Japanese blade. If you want a hand-forged working knife that handles real daily cooking without babying, this is the right choice.
How long does delivery take?
3–5 business days for forging in Kathmandu, then 5–10 days for international shipping via DHL Express or FedEx International — 8–15 days total in most countries. Shipping is free worldwide. You'll receive a tracking number once your knife ships.
What if the knife isn't right for me?
Return it within 30 days for a full refund — no questions. Personalised knives are eligible for return within 30 days if unused. The knife is also covered by a 6-month craftsmanship warranty covering forging, heat treatment, and handle fitment.
Can I order a fully custom chef knife?
Yes — our custom forge service handles fully bespoke builds. Specify your own blade profile, non-standard length, exotic handle materials, or commission a one-of-a-kind knife with custom engraving. Quoted individually, typically 2–4 weeks lead time.
