Butcher's Heavy Cleaver — 12.5" Hand-Forged Meat & Bone Cleaver, Made in Nepal

The Butcher's Heavy Cleaver is built for one thing: serious meat and bone work. The 12.5-inch blade is hand-forged from 5160 high-carbon spring steel — the same steel used in our Gurkha kukris — with a 3-inch blade width and forward-weighted balance designed to deliver power on every stroke. This is not a light kitchen knife. At 1.16kg without scabbard, it has the mass to split bone, break down large cuts of meat, and handle the kind of heavy prep work that defeats a standard chef knife.

The full-tang rosewood handle runs 6.5 inches and is reinforced for strength under repeated impact. Total length is 19 inches. The cleaver ships with a traditional wooden scabbard covered in leather — protection during storage and transport. Steel & cutting

5160 leaf spring steel sourced from recycled truck springs in Nepal. Cut to a heavy billet — this cleaver uses significantly more steel than a standard kitchen knife to achieve its forward-weighted mass.

Forge & shape

Heated in a coal forge and hand-hammered to the wide cleaver profile on the anvil. The broad 3-inch blade width, straight spine, and angled cutting edge are drawn out by hand — not stamped from sheet steel.

Temper & grind

Oil-tempered to ~58 HRC for toughness under repeated impact. Hand-ground to the final edge geometry — a single bevel that delivers chopping authority without being so thin it chips on bone.

Is this cleaver heavy enough for splitting bone?

Yes — that's what it's designed for. At 1.16kg in the standard 12-inch configuration, the forward-weighted blade has enough mass to split through joints, ribs, and medium-density bone cleanly. For very dense bone (large femur, skull) use the 14 or 16-inch configuration for extra mass and reach. The 3-inch blade width distributes impact across a wider surface area than a narrow cleaver, which helps drive through rather than deflect.

What steel is this and how do I maintain it?

5160 high-carbon spring steel — recycled truck leaf springs sourced in Nepal, oil-tempered to ~58 HRC. It's tough, holds a working edge well, and sharpens easily on a whetstone. Being high-carbon (not stainless), it needs basic care: hand-wash after use, dry immediately, apply a thin coat of food-safe mineral oil before storing. Never put it in a dishwasher. The blade will develop a grey-blue patina with use — this is normal and protects the steel.

What blade length should I choose?

12 inches is the standard — the right size for most butchery tasks including breaking down large cuts, splitting ribs, and jointing poultry.
